3/4 pound flank steak
1 tablespoon dry sherry
3 tablespoons soy sauce
1 tablespoon cornstarch
1 sweet green pepper, whole
8 1/2 ounces waterchestnuts, canned -- drained
3 tablespoons vegetable oil
16 ounces bean sprouts -- canned, drained
1/2 teaspoon salt
1/2 teaspoon sugar
11 ounces mandarin oranges -- canned, drained

Cut flank steak diagonally into paper thin strips. (1x1/2x1/4 inch).
Marinate steak in sherry and soy sauce about 10 minutes. Stir in cornstarch to coast each piece.
Meanwhile, wash and cup pepper, remove seeds and cut into 1x1/2 inch wide strips to make 1/2 cup. Cut waterchestnuts into 1/4 inch thick slices.
In a skillet or wok, heat remaining oil, stir-fry steak until it turns grey, return vegetables to skillet. stir-fry until heated through. Mix in mandarin oranges, heat and serve.
Makes 4 or 5 servings.
